Healthy Recipe: SALMON & AVOCADO ROLL

Another Ratio buster offering a complete meal and very easy to eat!

Points:
Orange (sweet potato); Yellow / Green (avocado); Bonus Point (avocado); White (garlic); Orange / Yellow (lime)

Preparation Time: 20 minutes


Serves 1


Ingredients:
1 cup of Sweet Potato
Half an Avocado
1 Lime
1 Tablespoon of Olive Oil
2 cloves of Garlic
120g Smoked Salmon

Cooking Directions:
  1. Boil the sweet potato until it softens 
  2. Mash together boiled sweet potato with the avocado and add the crushed garlic, the lime juice and olive oil. 
  3. Allow to cool in the refrigerator
  4. Place the mash on your salmon strips and roll up like a sushi roll
  5. Garnish with some parsley
