Healthy Cooking: LEMON GARLIC BROCCOLLI SALAD (G/W/OY)

So simple, full of flavour and pretty much zero calories. This is a great dinner or lunch snack when you don't feel like anything too filling. 

Points:
Green (broccoli); White (garlic); Orange / Yellow (lemon)

Serves: 1

Time: 10 minutes

Ingredients:
  • 3 Broccoli heads
  • 1 tablespoon of coconut oil
  • 2 cloves of crushed Garlic
  • 1/3 cup of water
  • 2 lemons
  • Sea salt and pepper to taste

Healthy Cooking Directions:
  1. Meanwhile, heat the coconut oil in a frying pan on medium heat
  2. Cut the broccoli into small pieces
  3. Saute the broccoli and garlic until it is bright green; around 2 minutes
  4. Add the water, then cover and steam for 5 minutes
  5. Add the juice of one lemon, plus the salt and pepper.

Calories 168; Carbohydrates 15g; Fat 12..5g

Simple, but a good source of colours without being filling.
