Mexican Meatballs (W, R)

Enjoy your meat with a little zest! Juice meatballs with a solid protein punch - it's the cheat meal without having to cheat ;)

Points:
White (onion and garlic); Red (Tomato)

Serves 4






Sauce Ingredients:
  • 1 medium onion, minced
  • 2 tbsp coconut oil
  • 2 cups tomato puree (make your own-about four large tomatoes pureed in a food processor)
  • 4 garlic cloves, minced
  • 2 tbsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt

Sauce Directions:
    1. Saute the onions in coconut oil until limp.  
    2. Add tomato puree, garlic, chili powder, cumin, oregano and salt.  
    3. Mix well and let simmer for 15-20 minutes, stirring often.  
    4. Pour the sauce into a food processor and process until smooth.
Meatballs Ingredients:
  • 400g ground beef
  • 400g ground pork
  • 1 1/2 tsp salt
  • 3 garlilc cloves
  • 1 tbsp oregano
  • 1/2 small onion, minced
  • 2 tsp cumin
Directions:
    1. Mix ingredients together to form golf ball sized meatballs. 
    2. Place meatballs into a glass oven tray and Bake at 375 for 15 min.  
    3. Pour your sauce over the meatballs and bake for another 10-15 minutes.
