Healthy Eating: WALDORF SALAD (BP/RP/W)

A salad with crunch a texture - and a good vegetarian option which includes plenty of your needed healthy fats! Very quick and easy to prepare and will hit your healthy fats without the heavy protein meats.

Points:
Bonus Point (apple); Red/Purple (red apple); White (celery & asparagus)

Serves 2

Time: 10 minutes



Ingredients:
60g of walnuts
2 Red Apples
1 Cup of chopped Celery
6 Asparagus Spears
Lettuce Greens
1 Tablespoon of Olive Oil or Balsamic Vinegar

Cooking Directions:
Boil your asparagus for 3 mins until softening
Chop your walnuts, apple and celery
Toss the salad mix and add your olive oil.
Serve and Enjoy!
